Waffles are something I didn’t even remember as a kid. I vaguely remember hotcakes – in the 80’s you called them hotcakes and not pancakes because that was the label of Maya Hotcakes who was the definitive hotcake maker back then. Mayan cake always lurks in the depths of our collective memory. But waffles, no. I think I first tried it because my kids always pester me to buy them one whenever we pass a Belgian waffle shop. You can’t imagine how their eyes sparkle whenever they have eyes.

Store-bought pancake mixes usually have a chemical taste that comes from preservatives. But that’s clearly not the case with this homemade pancake mix. These pancakes are made with all the usual ingredients you’d use to make pancakes or waffles, so you get deliciously fresh and great results every time.
Organic Pancake & Waffle Mix
I love using this pancake mix. It’s easy and makes perfect pancakes every time. But if you have time to make even fluffier pancakes, there’s an extra step you can do. Separate the egg whites from the yolks and beat the egg whites until they become foamy. The swollen egg white is then mixed into the batter, resulting in a uniformly fluffy pancake or light waffle.
When I make waffles with this homemade waffle mix, I add extra oil to the batter. You can still get great waffles using the same recipe as pancakes (really!), but I find that adding extra oil makes your waffles crunchier and better tasting.
Want even fluffier waffles? You can separate the egg whites and beat them into stiff, soft peaks, then mix them into the batter. Do not add too much egg white to the batter.
So now you know how incredibly easy it is to make your own homemade pancake mix from scratch (or make your own homemade waffle mix). Therefore, nothing can stop you from enjoying delicious pancakes or waffles whenever you feel like it, regardless of the time of day!

Note 1 – Weighing your pancake/waffle mix is the most accurate way to make sure you get the right results. If using a measuring cup, spoon the pancake mixture into the measuring cup until the measuring cup is full. Flatten the excess pancake mixture with the flat side of a knife (see the video recipe in the post).
Note 2 – If you prefer to separate the eggs for this recipe, be sure to add the yolks along with the buttermilk and butter. You will then need to add about 2 tablespoons of additional water per batch to the batter to compensate for the egg whites. Beat the egg whites until soft crumbly peaks form. Add egg white snow to the mixture. Then mix in only the remaining part of the egg white. Do not over mix. Lumps of egg whites are preferred.
