Yep, just plain old water. It lets the natural oat flavor shine through. If you prefer, you can use sour milk instead. Regular milk works fine. The riper the better. My batches made with very ripe bananas were the best – the pancakes were light and fluffy with a more creamy pancake texture and a nice banana flavor. You can use a medium ripe banana if you have it, but the pancakes will be denser and chewier (also very tasty in my opinion).

Eggs tie the gluten-free ingredients together and provide good nutrition. These pancakes cannot do without eggs, so they are not suitable for allergy sufferers.

Real syrup offers a touch of sweetness. In addition, the natural sugars help create soft and browned sides.

With a little butter, the pancakes are moister and fluffier, with more air pockets. If you’re avoiding dairy, replace the butter with melted coconut oil.

Baking powder creates bubbles in the batter and provides extra lift when the batter hits the hot pan. It is the key to making fluffy pancakes.

1. Combine. Add the banana, eggs, oats, oil, maple syrup, water, vanilla and salt to a blender and blend until smooth.

It’s good if you can see some fine material from the ground oats, but you shouldn’t see any large flakes.

2. Cook. Heat a frying pan to medium heat or use a frying pan. You’ll know it’s ready to cook when the water boils quickly while it’s in the pan.

Oat Flour Pancakes (so Fluffy And Tender!)

Spray pan with cooking spray and pour batter into center, using about 1/4 cup at a time. You don’t want the pancakes to be too big or they will be difficult to flip.

When bubbles start to form on top of the pancakes and the spatula is lightly inserted under the pancake, it is ready to be flipped. Fry on the other side until golden, about 2 to 3 minutes.

Repeat with the remaining batter, remembering that you may need to reduce the heat as you go. I have to turn the heat down to medium low when cooking the pancakes. If the surface of your pan starts to smoke, you’ll know it’s too hot.
