Plus, these pancakes are made with whole grains—oats—and other healthy ingredients. It will keep you full until lunch. While not decadent buttermilk pancakes, they are absolutely delicious on their own.

Ingredient Banana Oat Pancakes
Maybe there will be one! Throw the oatmeal into the blender with the rest of the ingredients, essentially turning it into oatmeal.
Yep, just plain old water. It lets the natural oat flavor shine through. If you prefer, you can use sour milk instead. Regular milk works fine. Over the years, I’ve found that non-dairy milks can contain unnecessary preservatives or thickeners, which can negatively affect the taste – especially when heated.
The riper the better. My batches made with very ripe bananas were the best – the pancakes were light and fluffy with a more creamy pancake texture and a nice banana flavor. You can use a medium ripe banana if you have it, but the pancakes will be denser and chewier (also very tasty in my opinion).
Eggs tie the gluten-free ingredients together and provide good nutrition. These pancakes cannot do without eggs, so they are not suitable for allergy sufferers.
Almond Milk Pancakes
Real syrup offers a touch of sweetness. In addition, the natural sugars help create soft and browned sides.
With a little butter, the pancakes are moister and fluffier, with more air pockets. If you’re avoiding dairy, replace the butter with melted coconut oil.
Baking powder creates bubbles in the batter and provides extra lift when the batter hits the hot pan. It is the key to making fluffy pancakes.
All this has its own extra flavor. If you don’t like cinnamon, leave it out. The salt simply brings out the other flavors so you can taste the nutty oats and bananas.
Pancake Recipe With Oat Flour
Prepare the dough before cooking. These pancakes are very easy to whip up and the batter will thicken over time, so don’t mix too early. These pancakes are also great warm if you want to make them ahead of time.
Make sure you clean your kitchen properly. It is ready when a few drops of water splash upon impact. Don’t start too early or your pancakes will not brown and will be difficult to spread.
Griddles are great because you can make multiple pancakes at once. Electric hotplates are good because the temperatures remain constant.
If you are cooking on the stovetop, you may need to lower the heat a bit more over time. Your temperature is too high if the pancakes are very brown on the outside while still raw on the inside.
Banana Oatmeal Pancakes Made In A Blender
If it’s not wood, they may not need to be buttered at all. Use a light hand though, as too much butter can burn over time.
The pancakes are ready to flip when about 1/2 inch of the surface turns from shiny to dull. It’s better to wait a little longer than end up with a mush.
Unique pancake toppings are welcome here – try a drizzle of maple syrup, fresh fruit (banana slices or fresh berries) or even whipped cream.
For extra protein and nutty flavor, add a spread of almond butter, pecan butter, or peanut butter. Or serve with a dollop of Greek yogurt.
Vegan Banana Oatmeal Pancakes
A few have asked if blueberries can be added to these pancakes. The answer is yes! Mix up to 1 cup of fresh blueberries into the finished dough.
Don’t try to mix more nuts into the pancake batter – you can mess up the moisture balance and throw off the results.

Surprisingly, you will need oats and bananas to make my Banana Oat Pancakes! I topped it with an egg, Greek yogurt, baking powder, a little syrup, and then cinnamon and vanilla for flavoring.

Oatmeal Pancakes With Maple Fruit Recipe
Feel free to add a pinch of cinnamon or a teaspoon of vanilla extract if you like, or a handful of chocolate chips or blueberries like these dishes do, for fun!
1. Combine. Add the banana, eggs, oats, oil, maple syrup, water, vanilla and salt to a blender and blend until smooth.
It’s good if you can see some fine material from the ground oats, but you shouldn’t see any large flakes.
2. Cook. Heat a frying pan to medium heat or use a frying pan. You’ll know it’s ready to cook when the water boils quickly while it’s in the pan.
Oat Flour Pancakes (so Fluffy And Tender!)
Spray pan with cooking spray and pour batter into center, using about 1/4 cup at a time. You don’t want the pancakes to be too big or they will be difficult to flip.
When bubbles start to form on top of the pancakes and the spatula is lightly inserted under the pancake, it is ready to be flipped. Fry on the other side until golden, about 2 to 3 minutes.
Repeat with the remaining batter, remembering that you may need to reduce the heat as you go. I have to turn the heat down to medium low when cooking the pancakes. If the surface of your pan starts to smoke, you’ll know it’s too hot.
Note: Oats will continue to absorb
